Cookie decorating was the main event of the party and I wanted to bring something to contribute. I considered baking sugar, but that seemed boring. So I decided on LEMON sugar cookies and used to tastespotting to look up a recipe. I stumbled upon <a href="http://www.mybakingaddiction.com/chewy-lemon-sugar-cookies/">this blog</a> and got to work.<br /><br /><div style="text-align: center;"><a href="http://s764.photobucket.com/albums/xx281/arose90/?action=view&current=lemonsugarcookie.jpg" target="_blank"><img src="http://i764.photobucket.com/albums/xx281/arose90/lemonsugarcookie.jpg" alt="Photobucket" border="0" height="400px" width="300px" /></a><br /></div><br /><div style="text-align: center;"><span style="color: rgb(255, 204, 51);font-size:130%;" ><span style="font-weight: bold;">Lemon Sugar Cookies</span></span><br /><br /><strong>Ingredients</strong><br /></div><p style="text-align: center;"> 2 3/4 cups all-purpose flour<br />1 teaspoon baking soda<br />1/2 teaspoon baking powder<br />1/2 teaspoon salt<br />1 cup butter, softened<br />1 1/2 cups white sugar<br />1 egg<br />1/2 teaspoon vanilla extract<br />Zest of one large lemon, finely minced<br />4 tbsp fresh lemon juice<br />1/2 cup sugar for rolling cookies</p><div style="text-align: center;"> </div><p style="text-align: center;"><strong>Directions</strong><br />1. Preheat oven to 350 degrees. Line cookie sheets with parchment paper.<br />2. In a small bowl, stir together flour, baking soda, baking powder and salt. Set aside.<br />3. Using a mixer, beat together the butter and sugar until smooth and very fluffy.<br />4. Beat in egg, vanilla extract, lemon juice and lemon zest.<br />5. Gradually blend in the dry ingredients.<br />6. Roll rounded teaspoonfuls of dough into balls, and roll in sugar. Place on lined cookie sheets about 1 1/2 inches apart.<br />7. Bake 8 to 10 minutes in the preheated oven, or until lightly browned.<br />8. Let stand on cookie sheet two minutes before removing to cool on wire racks. (I somehow missed this direction so a few of mine broke in half)<br /></p><div style="text-align: center;"> </div><p style="text-align: center;">Makes approximately 24-30 cookies depending on size</p><br />This cookie was perfect for the party and added a little punch to the classic sugar cookie. I love buying fresh vegetables and using them throughout the week. The farmers there are so wonderful and dedicated to what they do. Going this semester has really reinforced my belief of how important it is to support local agriculture.<br /><br /><a href="http://www.lazywillowfarm.com/">Lazy Willow Farm</a> is smart and in addition to selling an array of fresh, seasonal vegetables they have a couple of recipe handouts that complement the vegetables they are currently selling. If the stems are large, remove and chop fine<br /><br />In a large sauce pan, heat the oil over medium heat. Add onion, cook gently for about 2 minutes. Add the tomatoes, salt, pepper, and stir, cooking until the tomato juice has reduced substantially and the kale is tender.<br /><br />Take the pot off the heat and stir in cooked rice. Marilisa and I took a road trip up to <a href="http://www.hillcrestorchards.net/">Hillcrest Orchards</a> in North Georgia with our significant others to do a little apple picking last weekend. Unfortunately we missed the actual "picking season," but we still had a great time eating all sorts of treats, buying about 10lbs of different types of apples and listening to some bluegrass in Taylor's jeep.</span><br />

Cut in butter </span></span><span class="Apple-style-span" style="font-family: georgia;"><span class="Apple-style-span" style="color: #333333;">with a pastry blender or two knives until you have pea-sized crumbles. Gently mix in beaten egg.</span></span><span class="Apple-style-span" style="font-family: georgia;"><span class="Apple-style-span" style="color: #333333;"><br />

Spray a 9x9 baking dish </span></span><i><span class="Apple-style-span" style="font-family: georgia;"><span class="Apple-style-span" style="color: #333333;"> </span></span></i><span class="Apple-style-span" style="font-family: georgia;"><span class="Apple-style-span" style="color: #333333;">with non-stick cooking spray. Gently pat about 2/3 of the crumb mixture onto the bottom of the dish. Preheat oven to 350 and set aside.<br />

<span class="Apple-style-span" style="font-family: georgia;"><span class="Apple-style-span" style="color: #333333;">To prepare apple filling, combine flour, sugar, and cinnamon. Toss with apples and spread apples out on prepared crust. Sprinkle reserved crust mixture over apples evenly and bake in preheated oven for 40 minutes </span></span><i><span class="Apple-style-span" style="font-family: georgia;"><span class="Apple-style-span" style="color: #333333;">(mine took a little longer to cook in the middle)</span></span></i><span class="Apple-style-span" style="font-family: georgia;"><span class="Apple-style-span" style="color: #333333;">. When finished, allow to cool completely.<br />

To prepare glaze, whisk together powdered sugar, almond extract, and enough milk to achieve desired consistency. Place glaze in a Ziploc bag and cut off a very small portion of one of the corners. Drizzle glaze over cooled pastry and allow to harden (you can place it in the freezer to hurry things along).
